A recipe from a British cookbook wants 200 grams of flour, your kitchen scale reads in ounces, and the oven dial only speaks Fahrenheit while the instructions say 180 Celsius. How unit conversion works

Every conversion multiplies your value by a fixed factor, and the good ones use exact factors set by international agreement rather than the rounded approximations people memorize. One inch is defined as exactly 25.4 millimeters. One pound is exactly 0.45359237 kilograms. One mile is exactly 1,609.344 meters, because a mile is 5,280 feet and a foot is 0.3048 meters by definition. These aren't measured constants that drift — they're agreed definitions, which is why a properly built converter is precise to as many decimals as you need rather than "close enough."

Temperature is the exception that trips everyone, because Celsius and Fahrenheit don't share a zero point. You can't just multiply; you have to shift and scale. To go from Celsius to Fahrenheit, multiply by nine-fifths and add 32. To reverse it, subtract 32 first, then multiply by five-ninths. Multiply 100 by 0.621371 and you get about 62 miles per hour — comfortable highway speed, not the panic 100 might suggest to an American driver. Now the recipe: 200 grams of flour, divided by 28.3495 grams per ounce, is 7.05 ounces, or a touch over 7 ounces on your scale. And that oven: 180 Celsius times nine-fifths is 324, plus 32 gives 356 Fahrenheit, so you'd set a dial-marked oven to 350, the nearest common notch. Common mistakes when converting units

The most common slip is applying a multiply-only rule to temperature, where the missing 32-degree offset turns a mild 20 Celsius into a nonsensical 36 Fahrenheit instead of the correct 68. A second trap is chaining rounded conversions: if you round to two decimals at every step of a length-to-area-to-volume calculation, the error snowballs, so carry full precision through the whole chain and round only the final answer. A third is confusing similar-sounding units — a nautical mile is longer than a statute mile, a U.S. fluid ounce differs from an imperial fluid ounce, and a metric ton is not the same as a U.S. short ton — and picking the wrong one silently corrupts the result even though the arithmetic is flawless. People also reverse the direction of a factor, dividing when they should multiply, which is easy to catch with a sanity check: converting kilometers to miles should always give a smaller number, so if your miles figure came out larger you flipped the operation. Why do U.S. and imperial gallons differ?

History, mostly. A U.S. gallon is 3.785 liters while an imperial gallon used in the UK is 4.546 liters — about 20 percent larger. That means a car rated at 40 miles per U.S. gallon looks like roughly 48 miles per imperial gallon on paper without being any more efficient. Always confirm which gallon a figure uses before comparing fuel economy across countries.

What's the difference between mass and weight units?

In everyday use people say weight when they mean mass, and for kitchen and shipping purposes it doesn't matter — a kilogram converts to about 2.205 pounds regardless. Strictly, mass is the amount of matter and weight is the force gravity exerts on it, so an object's weight would differ on the Moon while its mass wouldn't. For terrestrial conversions the distinction is academic.

Why isn't there a clean number between metric and imperial?

Because the two systems were designed independently and never meant to align. Metric is built on powers of ten around physical constants; imperial grew from body-based and trade units over centuries.
